Potato salad

Potato salad is my favorite dish. For Easter, Midsummer, New Year's Eve, and of course birthdays or just for no reason at all.

It seems like a very simple recipe. Oh no, proportions are important here, so that it doesn't taste like just cucumbers, boiled sweet carrots, or too much potatoes. Whatever I haven't tried, my family said it was already good, but my inner voice said it's not right, something is missing, or something is too much, I need to try something different. I tried, tried, oh my god, how many times I tried until I came up with these proportions:

9 large potatoes, boiled with their skins on,
1 large carrot, boiled with their skin on,
1 medium onion,
3 large hard-boiled eggs,                                                                   
350 g smoked sausage,  
2 large or 4 smaller pickled cucumbers,
250 g mayonnaise,
2 dessert spoons with a heap of sour cream,
a pinch of salt,
a pinch of ground black pepper,
a pinch of sugar.

Honey cake. Video recipe. Step by step.

A very tasty cake. But at the same time, it is also unruly. Its ideal version did not come to me so easily.

The first recipe, which seemed understandable from start to finish and I was confident that I would easily cope with it and the honey cake would be delicious, resulted in disappointment. The sponge cake came out too thick and dry, as I later concluded, the amount of flour specified in the recipe was too large. The cream from sour cream, sugar, with gelatin added was not so bad. But since the sponge cake was not moistened, because the recipe did not say so, then all the cream had soaked into the sponge cake, and was no longer visible or felt.

What followed was, I can't even count how many honey cakes I baked and tried different recipes, followed by my various improvements and attempts and again disappointment, that sometimes I thought that honey cake was probably not for me.

But then I found a honey cake recipe from the blog Zaigas Stūrītis, tried it and I liked it. I also liked that the cream is not made using condensed milk. However, this time too, I felt that the recipe needed improvements. And then the day came when I baked a honey cake according to the improved recipe. And yes, it was good, not just good, but excellent.

It was made excellent by my improvements and the honey I chose (Liepkalni, Ziedu medus). Before that, I had used different honeys, but with Liepkalni both a pleasant taste and a beautiful orange color. And most importantly, everyone knows that you can't eat this cake right away, it has to be allowed to infuse and only the next day. But I'll be honest, the next day is also too early, because you can still taste both the cream and the biscuit separately. The third day could be the best, but the fourth day is the best, because then the biscuit and cream flavors are mixed together and it's something, you can swallow your tongue how delicious it is.

P.S. Don't get me wrong, Liepkalni didn't ask me to promote them. I mention them and highlight them because the honey cake with their honey is very delicious.

I love to sew, but I love to cook even more. I love sweets, a lover of delicious food. Both taste and appearance are the most important things for me, everything else comes after that. Very often sewing comes second or third to me, but a delicious cake or bun comes first. My grandmother was an excellent, excellent cook, what she cooked, you could lick your fingers, how delicious it was all. My father, a tough and robust guy, also cooked well, although it was very, very rare, but he succeeded. 

No matter how hard I tried, I never came up with anything sensible the first time. But it could be that I am too critical and meticulous, but maybe the fault was in the recipes. Who knows. 

I am a generous person and I am happy to share my knowledge. The recipes on my blog have been tested and improved countless times until they have reached the final, best version. Enjoy!
